  How to cook Rice Mixed with shrimp paste(Khao-Kluke-Kapi)
Ingredient to cook Thai Rice Mixed with shrimp paste menu.
  • 800g cooked rice
  • 1-2 teaspoons shrimp paste
  • 50g green mango ro garcinia,finely chopped,
  • 2 tablespoons-fresh small hot chillies,finely cut
  • 50g shallots,peeled and thin-sliced
  • 100g fried dried prawns
  • 2-3 chicken eggs,beaten
  • 100g pork fillet, cut into bite-sized pieces
  • 2 teaspoons dark soy sauce
  • 2 tablespoons fish sauce
  • 2 tablespoons palm sugar, cucumbers, lemons
Step and how to cook Thai Rice Mixed with shrimp paste menu.
  1. Beat the eggs to foamy and fry until cooked,making into a thin disc.Roll it up and cut into shreds.
  2. Saute the shrimp paste in hot oil until fragrant,then mix well with the cooked rice.
  3. Deep-fry the pork to desired doneness. Add the palm sugar, fish sauce and dark soy sauce. When the palm sugar dissolves, taste to flavour. It should be pronounced sweet and salty tast. Remove from the heat.
  4. Dish up, Scatter with the shallots,garcinia,shredded eggs,fried dried prawns,small hot chillies and sweet pork.Arrange the cucumbers on one side of the plate.
